Vinagre de Jerez al Pedro Ximénez, 7% acidity

Only the finest grapes are used to make the sherry vinegar: During oxidative fermentation, the wine passes through different casks as time progresses. Using the Solera Criadera method, it ripens in American oak barrels that were previously filled with vintage sherry for 30 years and already contain old sherry vinegar with all its fragrances and maturation bacteria. After the maturing time, only one part is bottled again and the rest is refilled. The strong and intense taste of this traditional Spanish product is created by the tried-and-tested Solera system, which adheres to a particular order of drum storage. On an original sherry vinegar from Jerez, you will find the region of origin, the added sherry type and the specification of a year. Sherry vinegar PDO consists of grapes from the white grape vine “Pedro Ximénes” and contains 7% acid. It harmonises perfectly with Mediterranean salad creations, gazpacho and antipasti, peanut oil, olive oil and sesame oil.
