Organic Juniper berries, whole

Organic products are cultivated and harvested with particular care and are synonymous with the gentle use of the landscape and raw materials as well as the highest quality. The juniper berry shrub is particularly at home on moorland and in mountainous regions, and can be found throughout Europe. The further south the juniper berries grow, the stronger the flavor will be. Juniper berries have a slightly resinous, fir-like smell; they taste slightly bitter but also aromatic and spicy. The strong taste of the forest and moorland comes from the high content of essential oils, resins, bitter components and tanning agents as well as sugar. Juniper berries are a classic accompaniment to wild game dishes and are also used in preserves and pickles. However, it also goes extremely well with lamb, beef and pork dishes as well as sauerkraut, red and white cabbage, beetroot and turnips. The majority of the conventional juniper berry harvest goes to the spirits industry, where it is used to manufacture gin, genever, schnapps and liqueurs.
