Only boiled fruit juice from the best apples is fermented into vinegar and stored in oak barrels, where it evaporates and thickens. The wood in the barrels filters the vinegar and gives it its characteristic color and deep aroma. It matures in the oak barrel for several years. With an acidity of 5%, it is mild yet balanced. The sweetness typical of balsamic vinegars comes from fruit alone and is not added under any circumstances. Ideal for chilli oil, safflower oil, sesame oil and walnut oil.
