Pepper green, whole, in brine
Pepper is now grown in most tropical countries with humid climates – such as India, Indonesia, Sri Lanka and Madagascar. Pepper is available in many different quality classes. These are defined by the aroma, heat, size, color and weight of the individual grain. Today, well over 20 types of pepper are known. As with black pepper, the unripened green pepper berries also set the tone for green pepper. The quick-drying process prevents the onset of fermentation and preserves the color. Green pepper is usually pickled in vinegar, alcohol, salt brine or a freeze-dried form.
