In ancient times and the Middle Ages, lovage was one of the most popular spice herbs in the province of Liguria in northern Italy. Presumably from Persia, the herb also found its way into Central and Northern Europe through the monastery gardens of monks. Its flavor is extraordinarily intense and strong, and is reminiscent of celery. If the dosage is correct, it does not detract from the flavor of the dish, but rather emphasises it. It is ideal for soups, stews and casseroles.
